Today’s meal was over a great lunch meeting with a good friend, Joy, who is preparing a workshop for a conference I am running. Joy is a poet, and her words drip with meaning and metaphor. It is hard to come away from time with her, and not view the world differently, seeing every small moment and simple item as something significant. She was speaking about the power of poetry to create community, and it wasn’t a far stretch to think about how Jeni’s art has created community. Today we enjoyed a simple homemade lunch of cajun chicken salad featuring the cajun spice mix from North Market Spices, a perennial favorite of mine. We topped the chicken with avocado and tomatoes over rye bread. I tossed kale in lemon juice, sea salt, olive oil, and pecorino romano to create a tart and tasty salad.
